My Egremont russet apple tree has decided to blossom a week after I harvested this years crop. Should I remove the blossom buds?

No, just leave them be. They'll shrivel up as the weather cools, and hopefully, you'll get more next year in spring at the right time. This is happening with a few plants right now, due to the unusually cool weather throughout most of September up to the last week or so. Now that its warmed up again, some plants have responded by trying to flower or putting out new growth.
