Does Leyllandi hedging grow fatter if you take the height down considerably?

Yes they do. Best to start before they get too tall. If you remove the leader they grow new branches all the way round the centre. If left to grow tall the bottom eventually gets bare.

They normally reach a mature width of 20 feet or so, regardless of height. I must admit, they aren't on my list of favorites.
