welcome to GoY. certainly there is no harm in dead heading the spent flowers as it may generate a second flush of flowers [depends on variety thought].
as to rabbits , yes they will give it a nibble. whether they actually chose to eat it I'm not sure. Rabbits have the habit of nibbling anything that comes across there mouths. [house rabbit and tv/computer cables are cases in point!]
