What's the best way of adding more Eryngium plants to my borders? Should I save the seed or by cuttings?

You can save the seeds, but they need to be stratified before they grow. The best way to do this is to fold the seeds in a damp napkin and place it into a ziploc plastic baggie, then place in the refrigerator for 6 weeks. This will simulate winter for them. Then some time in February, start the seeds indoors and babysit them until April when they are big enough and it's warm enough to plant them outside. Only plant out the biggest & strongest seedlings.
Another way is to divide the clump.
