Do I remove old and dead flower heads from my cordyline? What is the best time to do this?

I would do it as soon as the flowers fade. Keeping it from forming seed is good for plant vigor. Otherwise, it doesn't really matter when you cut them off.

We usually remove them because if you leave them they begin to look scruffy.
