I have several pomegranates changing from green to red. How do I tell when they are fully ripe, or should I wait until they start to split open and harvest all of them.

when I choose them in the supermarket I tap them if they sound hollow they are the riper ones. Also at the base where the old sepals are they should be dry and papery.
