I have planted perpetual spinach and various other greens which have all been attacked -- edge of leaf has been eaten and on some plants also centre of leaf -- I have checked regularly for evidence of insect infestation but found none -- neither have I found any evidence if slug/snail trails etc

I would go out at night with a flashlight and look for caterpillars. They're so good at hiding in the day, that's sometimes the only way to find them.

I do not know what is wrong with your spinach, but I have given up growing perpetual spinach many years ago, as they are always attacked by tiny worms found inside the tissue of the leaves.
