Should I be doing anything with my pepper plants ie nipping out leads or buds?

You can move the pepper plants indoors when it gets too cold. They do make an attractive houseplant. Pot them up in a larger pot with new potting mix, move them to a nice sunny warm place and keep well watered. Move them back outdoors in May and they will continue producing peppers for you: sooner & more abundant!

No pruning needed: that just reduces the crop.
