I have just planted out some winter pansies and the flower heads keep getting eaten! Any idea who the culprit may be & how do I stop it?

In my garden the culprits are slugs / snails and rabbits. Pigeons are also fond of them. If you have a bit of chicken wire or similar you could make a pansy guard and see if it helps, If not, you need to go out with a torch at night from time to time and stomp on the slugs.
