I want to raise a grassy area in my garden by about 25cms. For quickness, I would like to put new top soil straight onto the existing grass and then put new grass turves over it. Would this work ok? What would happen to the original grass which was now 25cms under?

Don't raise the grade around any trees and shrubs you want to keep, either.

The original grass will die and the fibres will rot down to feed the new turves. Just make sure that the old lawn was not compacted or waterlogged. Maybe spike it with a fork all over. Make sure there aren't any dandelions or docks as the roots of these will survive and grow up again to plague you!
