Can I eat yellow carrots that were harvested amongst my orange ones

I heard many years ago, that carrots were originally purple in Holland, before being changed to orange. Something to do with a flag.
Could be a whole load of nonsense, but who knows.

it is supposed to have been in honour of the royal 'House of Orange'. The orange form did occur naturally and they were then selected and bred for that purpose.
