Sets from bolted onions.
several bolted onions were left in place first in order to attract bees and later left as "mining bees were nesting under them after being seen polinating gooseberrys due to scare stories about commercial bees.
They are now producing small bulbs from the seed heads about 10mm across with roots.
Can these be used when the weather gets a bit colder?

Yes, bees love the flowers don't they. I cut down flowering leeks and put them on the compost heap, they were still being visited by bees a week later!!
