I would like to grow a dwarf bramley apple on a patio. I'm not sure what I should be asking when purchasing.

what do I do with a house orchid when it has finished flowering? »
Go for Bramley clone 20 (freely available) and on the dwarf rootstock M27.
Clone 20 is 20% less vigorous than a normal Bramley. This plus the dwarf rootstock should keep it relatively small. Just remember that Bramley by nature of its genes needs not just one pollinating apple but two. If there are any other apples in the area including crab apples, the bees will do all the work.
