How and when should you prune fruit trees

I can only say about apple and pear. If the winter is severe it can be late Feb. At that time you are pruning to the shape and size height YOU want when the tree is dormant. Try hard not too cut off too many fruit buds, they are fatter than leaf buds. In summer when fruit is set and expanding you can take back the growths that may extend beyond the fruit to about 3 buds of the extension, to help the fruit to get bigger. I am talking too about trees on limiting rootstock.
