Tomato Plants: To stop them growing too tall, can we cut the tops off without killing them. What is the best way to do this.

I was going to say "Why keep pinching?", when I realized that you folks limit foliage to speed ripening. Here, we encourage thick, wide foliage, to prevent sunburn.
