If I save the seed from my white cosmos and a beautiful cerise one , when I plant them next spring will they produce plants of the same colour as the parent?

Hit and miss. They could easily have cross pollinated.

It depends on whether or not they were hybrid. You'll probably get pink (or whatever the default cosmos colour is)
