Preferably, make the inner ring at least as wide as 1/3 of the tree's spread. Even so, it really won't be good for it--likely to lose some vigor and crop.

Make sure that your trees will not be sitting in water, with the soil area around them being so much higher!

Yes it would kill your apple trees Harry! You will need to create an inner ring to your raised bed that your apple trees grow out of.
