My Viburnum is about 7 years old now , for the first two years it was stunning then after that every year the leaves curl up and the plant does not do so good.
This is planted on a slop and we do have problems
keeping this well watered , also this was planted on top
of my dead cat ..

It sounds like there's not enough consistent moisture at the roots - use the hosepipe whenever you get a period of dry weather and this will sort your problem out. Viburnums are extremely hardy plants and with luck this plant will recover, i'd prune it back to healthy growth, water it very well and let it start to recouperate.
When you garden on a slope this is a problem, i have my front garden on a slope and it's a very dry place and
i have to use my hosepipe all year round out there, if there's a dry spell happening.
