if I pick say a nasturtium seed before it is ripe ie brown, will it keep on ripening and be viable next year

also should I grow angelica seeds from a big plant I have this year or save seed until next year

Unripe seeds don't usually continue to ripen properly off the parent plant. You may be lucky if you get it almost ready, but it would be better to let it ripen fully before taking off the parent.

Re your angelica, as a rule of thumb, fresh seed is always better than dried out and saved, so if the seeds are ready to sow, get on and sow them.
