I always grow beetroot in cells before planting out. Never had any problems doing it that way.
It maybe there wasn't enough root on them when you planted them out.
I transplant mine when they are about 2" tall when the first set of proper leaves has formed.

You are welcome Hillary, did you grow the beetroot as individual seeds in cells or altogether in a seed tray?

I always grow beetroots sown direct in the ground as Moongrower. Only they germinate better when the soil warms up, so don't be too eager to sow too early.

Totall agree Jimmy - don't sow to early

You really need to sow your beetroot seed where they are going to grow. This is a veggie that needs to be undisturbed to grow the root you eat.
