Hi tony and welcome to this fabulous site. are they bell peppers ? I like to leave mine on to turn red , but you can eat them at any stage when they are big enough.

True of any pepper, Tony, but if you leave them to get red, be sure to pick while they are still plump and shiny. Peppers allowed to shrivel on the bush often taste "off", at best.

Try "knocking" lightly on them - if they sound hollow they're ready to eat. :o)
