can i cut down my Pieris?

It's in flower now, all the flower is on the top of 15" bare stalks and i would like to cut it down to 6" high

I have seen shrubs cut down many times for tidiness. The leaves will soon grow out and if your shrub needs cutting back, cut some of the older branches to ground level. If it is too big for the pot, plant it in the shrubbery after flowering.
