i pruned each stem of my blackcurrant bush by 1/3 not realising that i wasnt meant to and was meant to remove a third of the old stems. Will the bushes bounce cack or have i done serious harm?

It should live, but no berries next year, or very few.
I once cut down All my Mothers Raspberry canes at the same time. Both the summer and autumn fruiting varieties, she was not impressed.

No, you may just have less flowering wood for next year. Go back and take out the oldest, thickest stems right to the base to encourage new growth.
