I planted some onions seeds in late summer and they are looking like small spring onions by now (early November). Can I leave them in the ground over winter to grow into larger onions for the spring?

Yes just leave them in the ground to keep growing. If you live in the north of the country you may find they don't survive if we have a long period of heavy frost and snow. You could try covering with fleece if the weather does get nasty or even cardboard.
