I have an overgrown Sambucus nigra f. porphyrophylla 'Eva', probably around 6 years old - can anyone tell me how and when to prune it.

Best time to prune is immediately after flowering, so that any new growth after that will flower the following year. Alternatively, you can cut it to the ground when its dormant in winter, or reduce some newer stems by half and take some older ones out at ground level.
