Is this the species (Saponaria Officinalis) that you can make soap from?? and are the leaves of this species edible?

Yes you can make soap from the plant by boiling the root, would not recommend eating as it contains saponins which are toxic.

the leaves also lather up a bit in warm water. definitely not for eating. common name is soapwort.
