We live in Argyll (in the middle of a field) and suffer from easterly winds, we're near the sea and get regular visits from deer and rabbits. We want something to enclose our garden a bit (not a huge hedge or an ugly fence), some shrubs that will withstand the weather and animals and advice on whether a wildlfower grow mat might solve the problem of a slope that gets very wet!

I live in the middle of a boggy field in Argyll and hate the look of rylock fencing too! My biggest regret for the garden is that I didn't fence the whole thing against the deer when we first moved. Years of disappointments and hours of fixing later I'm giving in.
If its only part of your field you want deer proof, take a drive to Achnebreac kennels in Cairnbaan. 1/4 mile before you get there there's a bungalow with a veg patch fence that is quite smart. No idea what it is. It'll cost you though.
