For apples and pears cutting(summer pruning) off the long overgrowths beyond the fruit can be done any time from now, especially after all this rain has grown them so long. Just leave 2 or 3 leaf axils and prune. During dormancy...usually in February....prune for shape and a balanced open tree, and keep any oversizing under your control. Any serious reshaping should be done at this time too.
