Comfrey Fritters -

I tried this again making the thick batter with Wrights Parmesan and Sun Dried Tomato Bread Flour, and milk.
A handful of chopped young Comfrey Leaves and fresh Parsley added to the batter. Also seasoning.
Fried slowly in a little Olive Oil over low heat.
Two halved Tomatoes in the same pan.
Garnished with Watercress.
They were lovely ! Made a good meal. Better flavour than sausage.
