What's that grasslike plant behind?

it's a pampas grass, was here when i moved in.
The plumes fall when it snows heavy so i have cut it back often and now i get lots more plumes. I have lots in the attic drying out. They say to spray them with hairspray and it keeps the dry bits from flying off in the house. I dont know how to colour them yet.
