Big Trellis filling out

You know taking a decent shot of this is quite photo tricky. For average metering it tends to over expose a bit (greens being a bit darker than the grey). I have a foliage setting but still the same. Spot metered off the grey bricks but green is to dark so over exposed 3rd 2 3rds of a stop and seemed better. However if i spot on the grey brick and half and on the trellis that seems best. Although the sun will go in and out and there is alot of reflected light as in beach/snow. So guess I need to bracket when I take this fron of house full sun shot.

Sorry for spiel, but basically a camera meters its general exposure to an average grey, except as the bulk here is green(and darker green) it over exposes a bit sending the grey bricks a bit lighter and washing out the highlights.
Also whearas 'film' would capture more shadow and highlight detail a digital basically 'processes' and tries to bump up detail by using contrast. This is made more difficult when the shot is fairly higher contrast anyway in fun sun with lots of reflected light from the floor. I can add neutral density in but the processor just tries harder. A polariser filter would be a good idea but dont have the folter attachement. Ok i'm rambling i will shut up
