It seems only seconds since the drought was upon us and I was watering my plants on the nursery every day. Roll on Spring!
I use a special low pressure sprinkler which will cope with very low water pressures but if used with a normal water pressure spreads water over a 40 foot diameter.

Do you leave them outside all winter ACM or do you put them in a Pollytunnel ?

The vast majority of plants are left outside overwinter. I do keep about 500 small cuttings in a coldframe for to be safe ( they would probably cope oudoors but I've found very small cuttings of otherwise hardy stock can be susceptible to a cold wet winter)
My coldframes are about 10 feet by 3 feet with a fully opening top so in better weather during the day I open them up and close them again at night
