Oh, this brings back childhood memories for me ... my Granny taught me how to use the handle of a wooden spoon to create the right shape ... they look very inviting, Gee! ... :o)

I couldn't cope with a wooden spoon, Shirley, so used the cream horn cones - much easier :)

This is the recipe I used, Cmsue. This amount makes about 12 so I doubled up the amounts for my greedy family!

Brandy snap recipe:

55g/2oz butter
55g/2oz caster sugar
55g/2oz golden syrup
50g/1¾oz plain flour
½ level tsp ground ginger
½ tsp lemon juice

Gently melt first 3 ingredients until sugar is dissolved. Remove from heat and add remaining ingredients. Stir until combined. Place a teaspoon of the mixture on a large baking sheet - only put 4 on at time as they spread a lot! Bake at 180C for 8-10 minutes and are golden brown. Leave to cool for a minute or so when they will still be pliable enough to mould around handle of wooden spoon or around cream horn cones. (I found this a bit fiddly to start with). When completely cold fill with whipped cream flavoured with brandy or liquer of choice.
