Not been to goog at making sponges. Lady at class last night brought in kettle and tea etc and a home-made sponge cake. I got the recipe and tried it..it worked! Not quite as light as heres but then she has Kenwood chef thingy! I was pleased tho :))

Idk? lol I know i had my oven too high for a fan assisted one..apart from that she used more eggs. avent tasted it yet lol..

6ozs SR flour
6ozs Sugar
6ozs Stork margarine (she was insistant on that!)
3 Eggs
Wee drop Vanilla essence

SHe bungs the whole lot in her Kenwood chef..I had to do it the hard way lol.

THen Butter icing and jam for filling
Dust lightly with Icing sugar

Same recipe that I use,Pixi..but I use whatever soft marg,that is on offer !.Think it might have been your oven temp,and that's all.I make mine in two tins..do you ? and use a hand held mixer and just bung it all in together..don't bother with that creaming mularkey ! Lol.
Still turns out ok..:o)

lol Stork is THE one then! i normally used butter but seems storks better. maybe oven was too hot Bloomer.
