I am finding that I have to pick the pods every day, or they quickly grow too large and are too tough to eat.

Ours hasn't got to the stage of picking yet, what size are you picking at, a little finger size perhaps, !! thanks I'll bear that in mind...

I have found if I pick them at 3" - 4" long, or the length of the palm of my hand, then they are not too tough. Although I live in the southern USA I have never tried fried okra; like to make the stewed tomatoes with okra over rice. I may have to give the fried okra a try if you have a good recipe.

Fried Okra
Ingredients
Serves: 4
10 pods okra, sliced in bite-size pieces
1 egg, beaten
150g (5 oz) polenta
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
100ml (4 fl oz) vegetable oil
Preparation
Prep: 15 mins | Cook: 15 mins
1.In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine polenta, salt and pepper.
2.Heat oil in a large frying pan over medium-high heat. Dredge okra in the polenta mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on kitchen roll.

mmm love Okra, we're growing just one plant as a first timer this year to see how we get on...That looks pretty healthy...
