Cheese factories in situ

European Cardiology Society announced this year information about trial proving strong health benefits of some European cheese, comparable to medical treatment. Among top five were Grana Padano and sheep cheese from Slovak mountain areas (among Swiss and Belgian cheese). Here we go!

Katarina, I remember the Slovak cheese called Ostepky or something like that . Simply delicious.
We have many little sheep farms around here on Vancouver Island and I like their cheeses as well but I am not sure if I would remember how their taste after 1/2 century. Slovakian cheese deserves to be on the top. Yummy.

I do not know, Amy, as production isn´t so large to be enough for larger market. I remember, that some time ago Tesco and Carrefour used to buy some of these sheep cheese from small producers, but they pressed their buiyng prices so much, that they stopped to sell it to hypermarkets. They sell it instead fo that in their own little shops and kiosks, specialized only on products made from the sheep and cow milk. If I want to get fresh sheep cheese, I have to travel up to northern or middle Slovakia, too :)
Ostiepky are still available all over the shops and hypermarkets, too, Klahanie :) Also "cat-o-nine -tails" (Korbaciky), sort of salty cheese reminding pigtail. Can send you some, if that is allowed in Canada :) I rememebr my brother in USA likes some of our products, but they are not allowed to be sent overseas.

That is a kind thought Kat but I doubt it would be allowed we have a good cheese maker in Norfolk a Mr's Temple a farmers wife she has won many awards she does make a sheep cheese ,I wonder if it could be similar to yours .......

They are made here as large loafs, they are white and are almost of mozzarella consistence, slightly harder. Have very delicious taste. They are kept in refrigerators, so they can be easily cut.

Sorry, but you cannot send it to Canada Katarina due to very strict regulations.
It would be wonderful if you could. I do not remember
Korbaciky. Maybe something what we call "curd" here?

Will make a photo of them soon, Klahanie :) Sorry about that. My Polish friends always asked me to bring korbaciky with me, when I was coming to Cracow :))) It is not curd, Klahanie. You think of "bryndza", don´t you?

Yes, I remember bryndza Katarina. Very good as well. Curd is little more solid here.
