Ceviche

Shrimps "cooked" in lime juice and mixed with home made Mexican salsa. Very popular dish.

It taste even better than it looks Sticki :-) I love avocados and I usually cut one or 2 into the mix . Here, in Mexican restaurants it is served in a margarita or vine glass. But we eat it from bowls or what ever deep dish we find .

Mainly tomatos, onions, lots of avocados and peppers; I put mainly sweet peppers but also one jalapeno (without seeds) for little bit of zip. I also add jicama for crunch. You can substitute jicama with a cut up stick of celery or cucumber but it is not in the mexican style.
Then I make a "limonada" with fresh limes ,sugar, salt, black pepper, cilantro, (some put oregano instead) , few spoons of spiced tomato puree (some use ketchup instead) and half a cup of water. This is sort of spiced sweet and sour mix I pour over the veggies and shrimp and let it sit in the fridge for an hour.
The main and most important part in making ceviche is that the shrimp (or fish) is "cooked" in lime juice not in boiling water. There are different ingredients in different parts of latin America .
I am sure that if you google "ceviche" you will learn more than you ever want to know. I do not make it up north as often as here Sticki. Somehow it tastes better in a hot climate. Specially with some romantic maxican guitar music in the background :-)

:-) Sounds good to me Bik.
Jalapeno adds a zip to food.
I do not use the seeds as they are very hot just the green part . Very good in salsas with cilantro or oregano.

Coca Cola taste better in Mexico too.
I wish my wife was more into bright colors. She likes the white everything look. Years ago when we first met,I had painted my kitchen a mellow orange.
She still talks about it like it was soooo wild-lol.

Lots of wild colours here Stan. Very popular among gringos to paint each wall in their houses different colours...like purple, orange, yellow, green...in between the various murals in one room.
Most Mexican houses are just exposed brick. Like the one we are in right now (2015-2016 winter)
