Hi Sue, don't bake it whole. The best way is to halve it lengthwise, scoop out the seeds. The seeds can be roasted & salted for a nutritious snack. With the two halves, drizzle with olive oil, salt & pepper to taste, roast cut side down on a roasting pan for about an hour 350°F - time will vary with size. The flesh will become soft and tender like a sweet potato. Serve as is with dinner or puree to make an elegant butternut squash soup.

Its an unworthy thought but what popped straight into my head was what a great cosh it would make! Just the right size, with a good handle and everything! I've never tried growing squashes you're clearly very successful at it!
Don't tell the cops it was my suggestion...
Do you bake them whole?
