Coconut cakes

This is just caster sugar, coconut and eggs. A recipe I got off the internet. Dead easy to make. Lots of information on there.
8 ozs coconut...5 ozs castor sugar...2 eggs.

beat eggs, add them to coconut and caster sugar, mix all together, squash into shape with hands (Messy job) and add a cherry on top. cook for about 25 mins. 180 I used 170 as have a fan oven. makes about 16 - 18 cakes. place greaseproof paper on tray when cooking.

They do look good Linda but sadly I only like fresh coconut.

I love anything with Coconut,Linda ,thank you,I will definitely make some of these,they look so good ! You can't beat home made cakes :o) Just need to finish a Victoria Sponge first Lol. x
