Aubergine bake AJH style!

I made this recipe up (as I often do)
Aubergine (to try growing in my new greenhouse for next year)
Tomatoes (mine still ripening at present!)
Onion (not tried growing these either yet!... There is time!)
Garlic (got some growing at present, must check how they are
getting on!)
Basil leaves (supermarket grown, but AJH maintained!)
