Here at the front door we have lots of weeds in the beds. I am thinking of replacing these shrubs with various grasses for a more natural look.

You could still keep the shrubs and plant various grasses in selected spots....

I like the style of your house, especially all the windows. You can style your yard according to what you want to view... say from the bedroom..livingroom..etc. That's a decided advantage to regrouping.
