Are my mammoth sunflowers ready to be harvested?

I am not sure what they should look like when they are ready to cut down .Can you tell by the picture I am putting up ? If you can not tell by this picture i will try to get a better one tomorrow.

Not sure what you mean by harvesting - that sort of implies you're going to use the seeds for something.
If the flowers have seed formed inside them (in the black centres) then you can cut them off and take the seeds, or you can just lay the heads somewhere for the birds to eat. Usually the seed is formed when the petals start to look old and tired!
