Is it possible you've actually got sucker growth growing from below the graft at the top of the standard stem? This grows very rapidly and gets very tall indeed. A photo would be good...

I am at this moment looking at a rose in a garden across the road from my window, the garden is tended by an old couple that are keen gardners and the whole garden is lovly from it's boxhedge to die for to a lovly selection of plants, there is a rose on a singel stem 'but there is another stem I surspect comes from the same plant, almost as tall,ok I will tell you it is 7 to 8ft high with a cluster of yellow roses tight like a ball on top, I would take a picture but untill my frend bothers to visit me I canot get it on hear, but I will ask one of them about it some time to day,and let you know what they say

It is possible that your standard rose is a grafted-on variety that may not be suitable for cultivation as a standard.ie. a vertical form and not a semi trailing one. You can buy basket type things that you fix to the top of a stake and train the shoots to that (if they will bend without snapping. It looks like a large upside down hanging basket.
