Why is my red cordyline going green in the centre of the leaves

Need to clarify what you're describing - are you saying all the leaves are developing a green sort of stripe through their centres, from top to bottom? Or are you saying the growing tip leaves look green?
If its the former, it might be that your cordyline has a stripe in the leaves which is only now apparent because it's growing in sun and not shade.
