How can I keep this from growing too tall or too wide? I'd like to aim for 10 ft by 4-6 ft.

Oh dear, what a shame - the beauty of this tree is the drooping of the tips of the branches - and you will lose that if you hack it back periodically. It does not take kindly to being pruned anyway, so let it grow and then remove it when its outgrown the space available for it.
