A standard prunus lusitanica (Portugal laurel). I have one with which I have done exactly as you're looking to do, although mine is now, after 15 years, on a seven ft trunk and has a spread of 8ft. Holly will also do it. Photinia x fraseri 'Red Robin' will, but to a lesser extent. To get a strong trunk, I would use either of the first two.
