Lupins growing well, some going to seed. Should I cut them down or leave them?

You cut off the flower stalks - the hairy spikes are seed pods, if you want lots of seeds then keep one stalk. Cut the rest of the stalks down and you should get more flower stalks later in the year. You keep the leaves - they are nice foliage plants in their own right.
