I've grown Cosmos Sonata from a packet of seeds this year. How true to these will they be if I keep and sow the seeds from them? Thanks

As with ALL plants, the only sure way to guarantee that they will come true is to grow them from a cutting, division, etc, as this would then be an exact clone of the mother plant.
A lot of commercial seeds are F1 or F2 hybrids so growing seeds from them won't come true. As seaburngirl said, give it a go, they may come up different and you might even end up with something nice. I do this with seeds that I collect all the time and part of the fun is waiting to see what I end up with.

and even then clones can mutate :o)

not sure what type of hybrid it is. but often you will get different colour and flower shapes. its worth a try, they will produce flowers.
