Winter is the usual time, but not when the ground is frozen.

A specialist fruit grower nursery would be the best place to look. Don't be afraid to buy online from them, as they have a reputation to maintain. You will also get a better choice of varieties

Lynn - Spaldings are better known for bulbs, so I don't know what quality their fruit trees will be. I also note their trees will reach ten feet - is this too tall for your site?

The other thing to watch for with dual trees is the vigour of the two varieties. If one is a stronger grower than the other, it will tend to take over the tree, although good suppliers will graft two varieties of equal vigour.

The eventual size of the tree is governed by the root stock. The variety is then grafted on to the root.

For apples, the smallest trees grow on M27, the next size will be on M9, then M26 and MM106

For plums, you will need Pixy rootstock

For pears, you will need Quince 'C' or Quince 'A'

Ken Muir, Reads Nursery (who explain rootstocks on their website) and Chris Bowers are three firms I have used in the past. While their prices may be higher, you know what you are getting with them.
