I have a south facing and would like to grow some evergreen climbers on the wall. I would like something that is fast growing but not out of control. I would prefer to have a climber that is pink or white with strong green leaves. One wall faces east and the other west ?

Hmm, don't think that's going to be possible, not if you want evergreen climbers. Most climbers with showy flowers are deciduous - what about a freestanding "wall" shrub, i.e., a shrub that prefers the shelter of a wall behind it?

How about growing ivy on the wall and undereplanting it with Tropaeolum or Codonopsis or something like that.

How about Trachelospermum jasminoides (Star Jasmine) Has white flowers and the perfume is divine. Look on Herons pics for this one.Or on my garden photo` 12th Aug. picture 12 to see what it looks like.
